Two Derry sisters who are set to do battle in the British Sandwich Designer of the Year competition.
Una Kincaid from The Sandwich Co. in Derry and Jeanette Lindsay from the Pepper Alley in Sligo have made it into the finals of the of Tuna and Chicken categories respectively which will be held in London next week.
If they get through the pair could go head to head in the grand final.
Una created a tuna and pomegranate sandwich with pear and celery dressed with wasabi and seame seeds on brown seeded bread. It has already been going down a storm in the Sandwich Co. in Derry
Her sister Jeanette who now lives in Sligo but previously worked for the Sandwich Co. created a ‘winter feast’ of a ciabatta with chicken and wild mushroom and a delicious nutty stuffing.
And to top it all the Sandwich Co in Derry have also been shortlisted in the Independent Sandwich Bar of the Year Award.
“This is the first time any Sandwich Bar from Northern Ireland has been in the Final - so we are thrilled,” said Una.
And while Una says she will be nervous at the competition next Thursday she’s glad to be sharing the experience with Jeanette who won the title 20 years ago.
“I definitely think there will be a few nervous moments between us sisters,” she said. “But its fantastic to be through to the Finals.”
Jeanette said: “It can be nerve wracking as you have to make the sandwich in complete silence.
“But there’s no rivalry between us, we are just glad to have got as far as we have. Our Mum Cecilia will be coming along to support us.”
Una added: “We’re also thrilled to have just received the brilliant news that “The Sandwich Co.” are through the Chamber of Commerce Business Awards for the “Most Outstanding Hospitality Business” 2013!! All our staff work so hard and are very loyal - it is most important that they get the recognition they so deserve!
