Foyle Hospice chef launches cookery book at tasty event

A local chef whose spends his days finding and cooking meals for patients at the Foyle Hospice will launch his own charity cookery book on Thursday, November 5, in the Waterside Theatre.

You can get your hands on Bill Duncan’s book ‘Delish’ at the special evening of tasty cuisine in which you can sample wine and canapés and watch a cookery demonstration.

Bill who has been resident chef at the local hospice for seven years, has over thirty years’ experience working in hotels and restaurants throughout Northern Ireland and England.

He will be accompanied on the night by other renowned chefs from local establishments including Paul Sharkey from City Hotel, Ian Orr, Chef Proprietor of Browns, Sean Harrigan from The Sooty Olive, and Colman O’Driscoll from Everglades Hotel.

Bill, very ably assisted by Terri Sythes and Michelle Hannaway has collated and presented a number of wonderful recipes including appetisers, main courses and desserts in one collection in his book.

Many are his own take on popular dishes with additional contributions from other local chefs and colleagues including a signature family dish from Maeve Gallagher, mother of Foyle Hospice’s patron Bronagh Gallagher.

Whilst the book focuses on tasty dishes it also takes account of health and nutrition which is extremely important for patients and their families, as well as staff and volunteers, who have been fortunate to sample Bill’s delicious cuisine over the years.

Speaking of the event and the launch of the recipe books Bill said, “When Terri approached me and asked me for suggestions to mark the 30th Anniversary of Foyle Hospice, the idea of a cookery demonstration seemed to be the logical event for me.

“I think every chef has the desire to compile their recipes in a book at some stage. I felt very honoured I was given the opportunity to write this cookery book with the knowledge that the proceeds will go towards helping the ongoing care that patients and families receive at Foyle Hospice”.
There will be an opportunity for members of the audience to sample food cooked by the wonderful line up of chefs on the night. There will be spot prizes and your chance to purchase “Delish” hot off the press and just in time

for that ultimate stocking filler. The book can be purchased for a reasonable price of £6.99.

Flavour of the City will take place on Thursday 5th November at the Waterside Theatre. It will include a wine and canapés reception at 7.30pm followed by the cookery demonstration at 8pm.

Tickets are £10 and available through Foyle Hospice or any of the charity shops or through any of our sponsors at the City Hotel, Browns, The Sooty Olive and the Everglades Hotel.
