A Co Tyrone cake decorator’s intricate design has seen her take top honours at the North’s premier food, drink and hospitality event.
Kate Duncan from Douglas Bridge won gold at the IFEX (International Food, Drink, Hospitality and Retail Exhibition Chefskills) Belfast show at the King’s Hall in late April for her free standing shoe made completely from icing.
The self taught cake decorator, who started decorating cakes as a hobby, also tasted success at the biennial event in 2010, taking a gold and bronze medal for her design.
“It’s intricate work that requires a lot of patience,” she told the ‘Journal’.
“There are no moulds and if something goes wrong you have got to go right back and start again.”
The shoe, one of two designed for the competition, took around eight weeks to perfect.
“For me, the more complicated the better, but if you break it, you have to bin it,” she says.
“It’s challenging and time consuming but I enjoy it.”
Kate’s passion for complex cake decorations started as a hobby - “ just doing stuff for the family,” she says - but the Douglas Bridge woman would love to see her pastime become a viable business.
